Peel and finely chop the onion, chilli & garlic and roughly chop the tomatoes.
Heat the oil into a large pan over medium heat before adding the onions with a big pinch of salt and pepper. Fry for 4-5 mins until soft.
Add the garlic, chilli and 2 tsp jerk seasoning, stir and continue to fry for a further 2 mins.
Add the chopped tomatoes, drained kidney beans and jackfruit along with the coconut milk. Stir well to combine, bring to the boil, then partly cover with a lid and simmer gently for 20 mins, stirring occasionally.
Cook the rice according to the packet instructions.
Add the spinach to the jackfruit mix, stir and allow to wilt. Season to taste.
