
This vegan Christmas cake is a tried and tested recipe, handed down from Suma member Wendy's mum. It has been made many times over and has been a family favourite for as long as she can remember.
The recipe includes brandy but some people prefer their cake without it as the dried fruit and spices create rich delicious flavours on their own.
It's really easy to make, it doesn't use eggs, and we've substituted the dairy milk for soya. What’s not to like! Then once it’s baked you can either leave it plain or decorate it as you fancy. Go traditional and use marzipan and icing sugar, or try something totally different.
